Melanie has been a leader in wellness, integrative medicine, and nutrition for nearly 20 years. Through hundreds of cooking classes, demos, and events Melanie has been teaching former NFL players, holistic practitioners, business professionals, employees, and kids how to simple cook meals with real whole plant-based food for 10 years.
My Plant-Based Journey…Melanie Albert
Plant-focused for over 30 years. I initially learned first-hand the power of eating real whole foods and plant-based foods 27 years ago. In 1993 my Mom was diagnosed with stage IV breast cancer, and the conventional doctors gave her six months to live. I moved from my successful corporate marketing career in Kansas City to Cocoa Beach, Florida to be with my Mom and Dad. I read nutrition books (there were only a few at the time). I had already stopped eating meat in the early 1980’s when I noticed I could not metabolize it and I intuitively started eating organic food in the early 1990’s. I encouraged my Mom to eat organic and more plant-based food. And, with a positive mindset, I’m happy to say my Mom is 92 years old in 2022!
Certified International Health Coach with Integrative Nutrition. Based on Andy Weil’s recommendation I enrolled at the Institute for Integrative Nutrition in New York City, where I learned from world-wide nutrition leaders and graduated in 2007 as a Certified Integrative Nutrition Health Coach.
Holistic College Cooking Instructor. From 2014-2019 I had the wonderful opportunity to teach and create curriculum for the private holistic college, Southwest Institute of Healing Arts, in Tempe, AZ, where I taught Whole Foods Cooking on-campus and a series of online Culinary Courses, some which use my cookbooks as the textbook.
Plant-Based Culinary / Cooking Training. A few years ago I decided to learn more in the culinary field to increase my knowledge and skills and to enhance what I could teach my clients. I completed the Rouxbe Professional Plant-Based Professional 200 hour Certification in 2015. In 2017-2019, I received 410 hours of culinary training with Fundamentals of Raw Cuisine with Matthew Kenney Culinary; Advanced Raw, Fundamentals of Cooking Foundation, and Superfoods with Plantlab Culinary.
I am very honored and excited to continue to share my culinary and nutrition learning with you and your organizations in your plant-based culinary and food art journey.

Following a successful marketing career with Fortune 500 companies, Melanie worked in marketing and licensing with Andrew Weil, MD/Weil Lifestyle for nine years, obtained credentials in integrative nutrition with the Institute for Integrative Nutrition in New York City in 2007. She has taught whole foods cooking at private college Southwest Institute of Healing Arts for three years, and Melanie received plant-based culinary training with Rouxbe, Matthey Kenney Culinary, and Plantlab Culinary.
Melanie has guided thousands of people to get excited about simple healthy cooking with real whole foods, with organizations including Visit Phoenix, Valley of the Sun United Way, Humana, Inc., Gregory’s Fresh Market, Downtown Phoenix Public Market, The Farm at South Mountain, City of Phoenix, the NFL Alumni Association, Phoenix Suns/Phoenix Mercury Kids Camp, and Future for Kids.
